Beans were an awesome addition to my diet. They helped reduce cost on my grocery list by filling in gaps and making my meals spread out and last longer, they added a lasting fullness factor, and they certainly didn’t skimp on the health benefits. The fact is, beans may be one of the single most important parts of what I eat today. And with all the different varieties available (I get the 15 bean soup mix) there is no end to the list of various benefits you get. Generally speaking, however, it boils down to complex carbs, (which we discussed in an earlier post) fiber, lots of vitamins and minerals, and especially protein. Beans can almost replace meat entirely in the protein department if it were not for the vitamin B-12 factor!
