Today I thought I would share a couple recipes that I recently threw together that turned out to be delicious! An amazing salsa with a spice bread for dipping!

Pineapple Jalapeno Salsa

Throw the following into your blender…

– 1 large tomato, peeled and deseeded.

– 1 fresh jalapeno

– 1/4 of a red onion

– 1 slice of fresh pineapple

– 1/8 cup fresh chopped parsley

– 1/8 cup fresh chopped cilantro

– 1 tbsp italian spice blend (thyme, oregano, basil, rosemary, etc)

– 3-4 fresh cloves of garlic

– 2 tbsp olive oil

– 1/2 cup filtered water (use a full cup for a thinner salsa).

– 1 tsp pepper

– 1 tsp chili powder

blend until salsa reaches desired consistency

Homemade Spiced Flat Bread

Combine the following in a large mixing bowl

– 2 cups whole wheat flower

– 1 cup filtered water

– 1/4 cup olive oil

– 1/4 cup chopped scallions

– 1 tsp garlic salt

– 1 tbsp italian spice blend (thyme, oregano, basil, rosemary, etc)

– 1 tsp pepper

– 1 tsp crushed red pepper

– 1 tbs chopped garlic

Mix and knead dough until it reaches even consistency. Add more flour or water if necessary. Spread onto a greased metal cooking sheet (I use olive oil). You want the bread to be about 1/2 inch thick or less. Bake for 20 minutes at 350 for a softer bread, 30 minutes for a crunchier bread.
